About Me

Neil Kalson

Chef / Instructor

“A human being should be able to change a diaper, plan an invasion, butcher a hog, conn a ship, design a building, write a sonnet, balance accounts, build a wall, set a bone, comfort the dying, take orders, give orders, cooperate, act alone, solve equations, analyze a new problem, pitch manure, program a computer, cook a tasty meal, fight efficiently, die gallantly. Specialization is for insects.”

― Robert A. Heinlein

I am a graduate of Arcata High School and Humboldt State University (B.S. Fisheries Biology). I am also a graduate of the Oregon Culinary Institute. I enjoy food and cooking tremendously and I find it extremely rewarding to share my experience with my students. I believe in student based and hands on learning. I am very open to student input. I love guiding students through the process of learning to approach tasks in an organized, efficient and safe way.

Here's a video by Mick Mugnai that captures some of the work I do in the classroom.
